Monday's Food: Chunky Chip Brownies with Zucchini





Today we're going to make Chunky Chip Brownies, a favorite of Tom and the boys (and me, too).

This is loosely based on a recipe from Simply in Season: A Mennonite Cookbook. I've altered the flours and added in a couple things to get it exactly the way I like them.



Ingredients

1/2 cup all purpose flour
1/2 cup oat flour
3/4 cup whole wheat flour
1/3 cup unsweetened cococa
1/2 t. baking soda
1/2 t. salt
3/4 c. sugar
3/4 c. brown sugar
2 1/2 c. peeled, shredded zucchini
1 egg
1/2 c. canola oil
1 t. vanilla extract
1/2 c. plain, nonfat yogurt
1/2 c. dark chocolate chips
1/2 c. white chocolate chips
1/2 c. chopped walnuts



Preheat oven to 350 degrees.

Sift flours, cocoa, salt and soda together into a large bowl.

Add in zucchini.

In another bowl, stir sugars, egg, yogurt, oil and vanilla. Add to first mixture.

Stir in nuts and chips.

Pour batter into greased (I sprayed with Pam) baking pan. I like thick brownies and used an 8 X 8 glass square pan. You can use a 13 X 9 if you like thinner brownies.

Bake for 30-40 minutes or until toothpick comes out clean.

Oh I love the combination of chocolate and zucchini! ours is almost ready for picking this season. SO appreciate another recipe that I can use with it and I really like the unique ingredients - like the oat flour and the yogurt -

What if I don't have oat flour? Any suitable substitute?

You can do all wheat instead :)
